The Mad Hatter pepper, also known as Bishop's Crown, is a very uniquely shaped mild pepper. The body of the peppers have very little heat and the wings are sweet and mild, making them a popular pepper for mild salsa and pickling. Because of its mild heat level, fruity flavor, and the unique appearance of the pods, Mad Hatter peppers are a great addition to any garden. Mad Hatter peppers average about 500 to 1,000 Scoville Heat Units (SHU).
Mad Hatter pepper plants are tall as they average about three to four feet in height. The peppers usually have three or four flat-wings and look somewhat like flying saucers. The heat level of Mad Hatter pepper is milder than both the world famous Jalapeno as well as the Cherry Bomb pepper. The “flying saucer” Mad Hatter pepper matures from green to red.
