The Red Zebrange pepper is the red variant of the Zebrange pepper, which was created by Laurent Minet from Belgium. The original Zebrange pepper is a cross between the Aji Fantasy and Christmas Bell (also known as Bishop’s Crown). The Red Zebrange pepper starts off green and ripens to red and does not have the stripes like the original Zebrange, although the appearance may vary. The Red Zebrange pepper has a low to medium heat level, similar to a mild Jalapeno, and a sweet fruity flavor with some tropical notes, somewhat like the Aji peppers. Although it has not officially been tested, the Zebrange pepper is believed to be around 5,000 to 10,000 Scoville Heat Units.
Red Zebrange peppers can be a mildly spicy addition to salads, salsas, and pickled dishes. They can also be stuffed with cheese, meat, or other fillings.
