The NuMex Twilight is one of the most beautiful pepper varieties in the world, as the peppers start out white, turn purple, then move through yellow and orange, and eventually turn red when they are fully ripe. The peppers were developed at the New Mexico State University, which creates all "NuMex" varieties of peppers. The small colorful peppers may look like they should be mild, but they’re far from it as NuMex Twilight peppers average about 30,000 to 50,000 Scoville Heat Units (SHU). NuMex Twilight peppers have about the same heat level as the Cayenne pepper and Tabasco pepper, but the size of the pepper is comparable to the Pequin pepper, typically coming in at around an inch in length. The NuMex Twilight pepper plant grows to be about 18 inches tall and is covered with rainbow-like peppers. It is a hybrid based on the Thai pepper.
