The Lumbre pepper is the ideal pepper for those who enjoy the exceptional flavor and versatility of the original Hatch pepper, but want more heat. A spicy variant of the world famous Hatch (New Mexico) Green Chile pepper, the Lumbre pepper was developed in New Mexico and averages close to 10,000 Scoville Heat Units, about twice as hot as the traditional Hatch pepper.
Lumbre peppers are smaller than other New Mexico peppers as they typically range in size from 5 to 7 inches. The thick walled peppers mature from green to red, and can be used green or red, but their heat level is spicier when they’re red. Lumbre peppers are about as spicy as Serranos and Jalapenos.
Like Poblano peppers and Anaheim peppers, the New Mexico peppers like the Lumbre are commonly found in foods such as burritos, salsa, green chile enchiladas, guacamole, chile verde, and hamburgers.
