The world famous Hatch (New Mexico) Green Chile pepper is one of the most sought after peppers because of its exceptional reputation for flavor and versatility. The pepper was originally grown in the Hatch Valley region of New Mexico. Hatch Green Chile peppers range in size from 6 to 10 inches and have mild heat, averaging about 1,000 to 8,000 Scoville Heat Units. The long thick peppers mature from green to red, and can be used green or red, but their heat level is spicier when they’re red. Hatch peppers are typically not as spicy as Jalapenos, but the heat level can vary. Some Hatch peppers can have the same heat level as Serrano peppers.
Like Poblano peppers and Anaheim peppers, the Hatch Green Chile pepper is commonly found in foods such as burritos, salsa, green chile enchiladas, guacamole, chile verde, and hamburgers.
